ArcGIS includes a wide variety of display options, some likely to be useful in this context and others rather less so. Double click a layer in the list pane and go to the 'symbology' tab to bring up these options. Display settings can be based on any of the fields in the attribute table or the external table linked to it. You may also find the 'labels' tab useful. Finally, SQL queries can be entered under the 'definition query' tab if you wish to exclude certain elements.
